How to make gluten-free zucchini walnut brownies?

Making gluten-free zucchini walnut brownies takes a few step but is overall a simple process. You melt the fats, chocolate and sugars together,  then add eggs and vanilla, then you combine the remaining dry ingredients in a separate bowl and then add them to the wet mixture. Lastly, you fold in the zucchini and walnuts, bake and viola! Deliciousness ensues!

Can you freeze Gluten-free Zucchini Walnut Brownies?

Yes! These brownies freeze exceptionally well. To freeze them successfully you must cut and wrap each one individually with plastic wrap then place them in a large ziplock bag or airtight container before placing in the freezer. The idea here is to lock moisture in and keep air out. 

Can these brownies be made with all-purpose flour?

Yes, this recipe works well with both gluten-free flour and all-purpose flour. For this recipe I used King Arthur Gluten-Free Measure for Measure Flour. Other flours may work well but I’ve only made this recipe with all-purposed and King Arthur’s Gluten-Free flour. If you try a different flour please leave a comment and let me know how it turned out.

Gluten-Free Zucchini Walnut Brownies

Fudgy, cakey and scrumptious gluten-free zucchini walnut brownie.


  • 6 oz baking chocolate
  • 1/4 cup olive oil
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 3 eggs + 1 yolk
  • 2 teaspoons vanilla extract 
  • 1 1/4 cups gluten-free flour
  • 1/2 cup Dutch process cocoa 
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoons cinnamon
  • 1 teaspoon espresso coffee powder
  • 2 cups shredded zucchini
  • 1/2 cup chopped walnuts


  1. Preheat overn to 350.
  2. Line the bottom of a 13x9 inch baking pan with parchment paper then spray the paper and the rest of the pan with non-stick cooking spray.
  3. Place a medium-sized sauce pan over low heat. Add olive oil, butter and baking chocolate and allow to slowly melt while stirring occasionally, approximately 5 minutes. After all chocolate and butter is completely melted stir well to combine.
  4. Beat in sugars to the chocolate mixture. Remove pan from heat.
  5. Add eggs and vanilla and continue to beat until well combined.
  6. Combine flour, cocoa powder, baking soda, sea salt, baking powder, cinnamon, coffee powder in a large bowl and mix well with a whisk.
  7. Add chocolate mixture to flour mixture and combine well.
  8. Gently fold in zucchini and walnuts until just combined.
  9. Pour batter into prepared baking pan and bake for 30 minutes. (Feel free to bake for 5-10 minutes longer for more of a cake texture)
  10. Allow brownies to cool at least 5 minutes then cut, serve and enjoy. Eat with
